Blueberry Muffins

Ingredients

  • - 1 and 1/2 cups all-purpose flour
  • - 3/4 cup granulated sugar
  • - 1/2 teaspoon salt
  • - 2 teaspoons baking powder
  • - 1/3 cup vegetable oil
  • - 1 large egg
  • - 1/3 cup milk
  • - 1 and 1/2 cups fresh or frozen blueberries

Directions

  1. 1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease the muffin cups.
  2. 2. In a large bowl, combine the flour, sugar, salt, and baking powder. Mix well.
  3. 3. In a separate bowl, whisk together the vegetable oil, egg, and milk.
  4. 4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. 5. Gently fold in the blueberries.
  6. 6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. 7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. 8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
