Blueberry Muffins

Ingredients
- - 1 and 1/2 cups all-purpose flour
- - 3/4 cup granulated sugar
- - 1/2 teaspoon salt
- - 2 teaspoons baking powder
- - 1/3 cup vegetable oil
- - 1 large egg
- - 1/3 cup milk
- - 1 and 1/2 cups fresh or frozen blueberries
Directions
- 1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease the muffin cups.
- 2. In a large bowl, combine the flour, sugar, salt, and baking powder. Mix well.
- 3. In a separate bowl, whisk together the vegetable oil, egg, and milk.
- 4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- 5. Gently fold in the blueberries.
- 6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- 7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- 8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
