Blueberry Pancakes

Ingredients
- - 1 cup all-purpose flour
- - 1 tablespoon sugar
- - 1 teaspoon baking powder
- - 1/2 teaspoon baking soda
- - 1/4 teaspoon salt
- - 1 cup buttermilk
- - 1 large egg
- - 2 tablespoons unsalted butter, melted
- - 1 cup fresh blueberries
Directions
- 1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- 2. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
- 3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- 4. Gently fold in the fresh blueberries.
- 5. Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
- 6. Pour 1/4 cup of batter onto the griddle for each pancake.
- 7. Cook the pancakes until bubbles form on the surface, then flip and cook until golden brown and cooked through.
- 8. Serve the blueberry pancakes warm with maple syrup or your favorite toppings. Enjoy!
