Blueberry Pancakes

Ingredients

  • - 1 cup all-purpose flour
  • - 1 tablespoon sugar
  • - 1 teaspoon baking powder
  • - 1/2 teaspoon baking soda
  • - 1/4 teaspoon salt
  • - 1 cup buttermilk
  • - 1 large egg
  • - 2 tablespoons unsalted butter, melted
  • - 1 cup fresh blueberries

Directions

  1. 1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. 2. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  3. 3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. 4. Gently fold in the fresh blueberries.
  5. 5. Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  6. 6. Pour 1/4 cup of batter onto the griddle for each pancake.
  7. 7. Cook the pancakes until bubbles form on the surface, then flip and cook until golden brown and cooked through.
  8. 8. Serve the blueberry pancakes warm with maple syrup or your favorite toppings. Enjoy!
