Ingredients

  • -1 cup cooked quinoa
  • -1/2 cup cooked chickpeas
  • -1/2 cup diced bell pepper
  • -1/2 cup diced cucumber
  • -1/4 cup diced red onion
  • -1/4 cup diced tomato
  • -1/4 cup sliced olives
  • -1/4 cup crumbled feta cheese
  • -2 tablespoons olive oil
  • -1 tablespoon lemon juice
  • -Salt and pepper to taste

Directions

  1. 1. In a large bowl, combine the quinoa, chickpeas, bell pepper, cucumber, red onion, tomato, olives, and feta cheese.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. 3. Pour the dressing over the quinoa mixture and toss to combine.
  4. 4. Serve the Buddha Bowl immediately or store in the refrigerator for up to 3 days. Enjoy!
