Ingredients
- -1 cup cooked quinoa
- -1/2 cup cooked chickpeas
- -1/2 cup diced bell pepper
- -1/2 cup diced cucumber
- -1/4 cup diced red onion
- -1/4 cup diced tomato
- -1/4 cup sliced olives
- -1/4 cup crumbled feta cheese
- -2 tablespoons olive oil
- -1 tablespoon lemon juice
- -Salt and pepper to taste
Directions
- 1. In a large bowl, combine the quinoa, chickpeas, bell pepper, cucumber, red onion, tomato, olives, and feta cheese.
- 2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- 3. Pour the dressing over the quinoa mixture and toss to combine.
- 4. Serve the Buddha Bowl immediately or store in the refrigerator for up to 3 days. Enjoy!
