Ingredients
- - 1 pound ground beef
- - 1 onion, diced
- - 1 bell pepper, diced
- - 1 can black beans, drained and rinsed
- - 1 cup cooked rice
- - 1 cup salsa
- - 1 teaspoon cumin
- - 1 teaspoon chili powder
- - Salt and pepper to taste
- - 4 large burrito-sized tortillas
- - 1 cup shredded cheese
- - Optional toppings: sour cream, guacamole, chopped cilantro
Directions
- 1. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper and cook until softened.
- 2. Add the black beans, cooked rice, salsa, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and let simmer for a few minutes.
- 3. Heat the tortillas in a dry skillet or microwave to make them pliable.
- 4. Divide the beef and bean mixture among the tortillas, placing it in the center of each tortilla. Top with shredded cheese and any optional toppings you desire.
- 5. Fold in the sides of the tortilla and then roll it up to enclose the filling.
- 6. Place the burritos seam-side down in a skillet over medium heat and cook until golden brown and crispy on all sides.
- 7. Serve the burritos hot with additional salsa, sour cream, guacamole, and chopped cilantro on the side. Enjoy!
