Ingredients

  • - 1 pound ground beef
  • - 1 onion, diced
  • - 1 bell pepper, diced
  • - 1 can black beans, drained and rinsed
  • - 1 cup cooked rice
  • - 1 cup salsa
  • - 1 teaspoon cumin
  • - 1 teaspoon chili powder
  • - Salt and pepper to taste
  • - 4 large burrito-sized tortillas
  • - 1 cup shredded cheese
  • - Optional toppings: sour cream, guacamole, chopped cilantro

Directions

  1. 1. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper and cook until softened.
  2. 2. Add the black beans, cooked rice, salsa, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and let simmer for a few minutes.
  3. 3. Heat the tortillas in a dry skillet or microwave to make them pliable.
  4. 4. Divide the beef and bean mixture among the tortillas, placing it in the center of each tortilla. Top with shredded cheese and any optional toppings you desire.
  5. 5. Fold in the sides of the tortilla and then roll it up to enclose the filling.
  6. 6. Place the burritos seam-side down in a skillet over medium heat and cook until golden brown and crispy on all sides.
  7. 7. Serve the burritos hot with additional salsa, sour cream, guacamole, and chopped cilantro on the side. Enjoy!
