Butter Chicken

Ingredients

  • - 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • - 2 tablespoons olive oil
  • - 2 tablespoons butter
  • - 1 onion, chopped
  • - 2 cloves garlic, minced
  • - 1 (14.5 ounce) can diced tomatoes
  • - 1 (6 ounce) can tomato paste
  • - 1 teaspoon ground cumin
  • - 1 teaspoon garam masala
  • - 1 teaspoon ground coriander
  • - 1 teaspoon ground turmeric
  • - 1/2 teaspoon ground cinnamon
  • - 1/2 teaspoon cayenne pepper
  • - 1 cup heavy cream
  • - Salt and pepper to taste

Directions

  1. 1. Heat the olive oil and butter in a large skillet over medium-high heat.
  2. 2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
  3. 3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  4. 4. Add the diced tomatoes, tomato paste, cumin, garam masala, coriander, turmeric, cinnamon, cayenne pepper, and heavy cream.
  5. 5. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
  6. 6. Season with salt and pepper to taste.
  7. 7. Serve over hot cooked rice or naan. Enjoy!
