Butter Chicken

Ingredients
- - 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- - 2 tablespoons olive oil
- - 2 tablespoons butter
- - 1 onion, chopped
- - 2 cloves garlic, minced
- - 1 (14.5 ounce) can diced tomatoes
- - 1 (6 ounce) can tomato paste
- - 1 teaspoon ground cumin
- - 1 teaspoon garam masala
- - 1 teaspoon ground coriander
- - 1 teaspoon ground turmeric
- - 1/2 teaspoon ground cinnamon
- - 1/2 teaspoon cayenne pepper
- - 1 cup heavy cream
- - Salt and pepper to taste
Directions
- 1. Heat the olive oil and butter in a large skillet over medium-high heat.
- 2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
- 3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- 4. Add the diced tomatoes, tomato paste, cumin, garam masala, coriander, turmeric, cinnamon, cayenne pepper, and heavy cream.
- 5. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
- 6. Season with salt and pepper to taste.
- 7. Serve over hot cooked rice or naan. Enjoy!
