Ingredients
- - 2 cups all-purpose flour
- - 2 teaspoons baking powder
- - 1 teaspoon baking soda
- - 1 teaspoon ground cinnamon
- - 1/2 teaspoon ground nutmeg
- - 1/2 teaspoon salt
- - 3/4 cup vegetable oil
- - 2 cups white sugar
- - 3 eggs
- - 2 teaspoons vanilla extract
- - 2 cups grated carrots
- - 1 cup chopped walnuts (optional)
Directions
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- 2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- 3. In a large bowl, beat together oil, sugar, eggs and vanilla.
- 4. Gradually add the dry ingredients to the wet ingredients and mix until just blended.
- 5. Fold in the carrots and walnuts.
- 6. Pour into the prepared pan.
- 7. Bake for 30 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
- 8. Cool before frosting with your favorite cream cheese frosting.
