Carrot Cake

Ingredients

  • - 2 cups all-purpose flour
  • - 2 teaspoons baking powder
  • - 1 teaspoon baking soda
  • - 1 teaspoon ground cinnamon
  • - 1/2 teaspoon ground nutmeg
  • - 1/2 teaspoon salt
  • - 3/4 cup vegetable oil
  • - 2 cups white sugar
  • - 3 eggs
  • - 2 teaspoons vanilla extract
  • - 2 cups grated carrots
  • - 1 cup chopped walnuts (optional)

Directions

  1. 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. 2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  3. 3. In a large bowl, beat together oil, sugar, eggs and vanilla.
  4. 4. Gradually add the dry ingredients to the wet ingredients and mix until just blended.
  5. 5. Fold in the carrots and walnuts.
  6. 6. Pour into the prepared pan.
  7. 7. Bake for 30 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
  8. 8. Cool before frosting with your favorite cream cheese frosting.
