Chicken And Rice

Ingredients

  • -1 lb boneless, skinless chicken breasts, cut into cubes
  • -2 cups long-grain white rice
  • -4 cups chicken broth
  • -1 onion, diced
  • -2 cloves garlic, minced
  • -1 teaspoon dried oregano
  • -1 teaspoon ground cumin
  • -1/4 teaspoon black pepper
  • -1/4 teaspoon salt
  • -2 tablespoons olive oil

Directions

  1. 1. Heat the olive oil in a large skillet over medium-high heat.
  2. 2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
  3. 3. Add the onion, garlic, oregano, cumin, pepper, and salt and cook for an additional 2 minutes.
  4. 4. Add the rice and stir to combine.
  5. 5. Pour in the chicken broth and bring to a boil.
  6. 6. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.
  7. 7. Remove the lid and fluff the rice with a fork.
  8. 8. Serve the chicken and rice hot. Enjoy!
