Ingredients
- -1 lb boneless, skinless chicken breasts, cut into cubes
- -2 cups long-grain white rice
- -4 cups chicken broth
- -1 onion, diced
- -2 cloves garlic, minced
- -1 teaspoon dried oregano
- -1 teaspoon ground cumin
- -1/4 teaspoon black pepper
- -1/4 teaspoon salt
- -2 tablespoons olive oil
Directions
- 1. Heat the olive oil in a large skillet over medium-high heat.
- 2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
- 3. Add the onion, garlic, oregano, cumin, pepper, and salt and cook for an additional 2 minutes.
- 4. Add the rice and stir to combine.
- 5. Pour in the chicken broth and bring to a boil.
- 6. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.
- 7. Remove the lid and fluff the rice with a fork.
- 8. Serve the chicken and rice hot. Enjoy!
