Ingredients
- - 2 cups of cooked rice
- - 1/2 cup of coconut milk
- - 1/2 cup of shredded coconut
- - 1/2 cup of mixed vegetables (carrots, peas, corn)
- - 1 small onion, diced
- - 2 cloves of garlic, minced
- - 1 teaspoon of curry powder
- - Salt and pepper to taste
- - 2 tablespoons of vegetable oil
Directions
- 1. In a pan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant.
- 2. Add the mixed vegetables to the pan and cook until they are slightly tender.
- 3. Pour in the coconut milk and stir well to combine with the vegetables.
- 4. Add the cooked rice to the pan and mix everything together.
- 5. Sprinkle in the curry powder, shredded coconut, salt, and pepper. Stir well to ensure the seasonings are evenly distributed.
- 6. Cook the coconut fried rice for a few more minutes, stirring occasionally, until everything is heated through.
- 7. Taste and adjust seasoning if necessary.
