Coconut Fried Rice

Ingredients

  • - 2 cups of cooked rice
  • - 1/2 cup of coconut milk
  • - 1/2 cup of shredded coconut
  • - 1/2 cup of mixed vegetables (carrots, peas, corn)
  • - 1 small onion, diced
  • - 2 cloves of garlic, minced
  • - 1 teaspoon of curry powder
  • - Salt and pepper to taste
  • - 2 tablespoons of vegetable oil

Directions

  1. 1. In a pan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant.
  2. 2. Add the mixed vegetables to the pan and cook until they are slightly tender.
  3. 3. Pour in the coconut milk and stir well to combine with the vegetables.
  4. 4. Add the cooked rice to the pan and mix everything together.
  5. 5. Sprinkle in the curry powder, shredded coconut, salt, and pepper. Stir well to ensure the seasonings are evenly distributed.
  6. 6. Cook the coconut fried rice for a few more minutes, stirring occasionally, until everything is heated through.
  7. 7. Taste and adjust seasoning if necessary.
