Dollar Pancake

Ingredients

  • - 1 cup all-purpose flour
  • - 2 tablespoons sugar
  • - 1 teaspoon baking powder
  • - 1/2 teaspoon baking soda
  • - 1/2 teaspoon salt
  • - 1 cup buttermilk
  • - 1 large egg
  • - 2 tablespoons unsalted butter, melted
  • - Cooking spray or additional butter for greasing the pan

Directions

  1. 1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. 2. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  3. 3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if the batter is a bit lumpy.
  4. 4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
  5. 5. Pour 1/4 cup of batter onto the pan for each pancake.
  6. 6. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  7. 7. Flip the pancake and cook for an additional 1-2 minutes, or until golden brown.
  8. 8. Repeat with the remaining batter, greasing the pan as needed.
  9. 9. Serve the dollar pancakes warm with your favorite toppings like maple syrup, butter, or fresh fruit. Enjoy!
