Ingredients

  • - 2 cups light or dark rum
  • - 2 cups whole milk
  • - 1 cup heavy cream
  • - 1/2 cup sugar
  • - 6 large egg yolks
  • - 1/2 teaspoon ground nutmeg
  • - 1 teaspoon vanilla extract

Directions

  1. 1. In a medium saucepan, combine the rum, milk, cream, and sugar. Heat over medium-low heat, stirring occasionally, until the sugar is dissolved. Do not boil.
  2. 2. In a medium bowl, whisk together the egg yolks. Slowly add 1/2 cup of the warm milk mixture to the egg yolks, whisking constantly.
  3. 3. Add the egg yolk mixture back to the saucepan and cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  4. 4. Remove from heat and stir in the nutmeg and vanilla extract.
  5. 5. Strain the mixture through a fine mesh sieve into a bowl and cool completely.
  6. 6. Serve chilled or over ice. Enjoy!
