Ingredients

  • -3 cups rolled oats
  • -1 cup chopped almonds
  • -1/2 cup shredded coconut
  • -1/2 cup honey
  • -1/4 cup melted coconut oil
  • -1/2 teaspoon ground cinnamon
  • -1/2 teaspoon vanilla extract
  • -1/2 cup dried cranberries

Directions

  1. 1. Preheat oven to 325°F.
  2. 2. In a large bowl, combine oats, almonds, and coconut.
  3. 3. In a separate bowl, whisk together honey, coconut oil, cinnamon, and vanilla extract.
  4. 4. Pour honey mixture over oat mixture and stir until all ingredients are evenly coated.
  5. 5. Spread mixture onto a parchment-lined baking sheet.
  6. 6. Bake for 25 minutes, stirring once halfway through.
  7. 7. Remove from oven and let cool for 10 minutes.
  8. 8. Stir in dried cranberries.
