Ingredients
- -3 cups rolled oats
- -1 cup chopped almonds
- -1/2 cup shredded coconut
- -1/2 cup honey
- -1/4 cup melted coconut oil
- -1/2 teaspoon ground cinnamon
- -1/2 teaspoon vanilla extract
- -1/2 cup dried cranberries
Directions
- 1. Preheat oven to 325°F.
- 2. In a large bowl, combine oats, almonds, and coconut.
- 3. In a separate bowl, whisk together honey, coconut oil, cinnamon, and vanilla extract.
- 4. Pour honey mixture over oat mixture and stir until all ingredients are evenly coated.
- 5. Spread mixture onto a parchment-lined baking sheet.
- 6. Bake for 25 minutes, stirring once halfway through.
- 7. Remove from oven and let cool for 10 minutes.
- 8. Stir in dried cranberries.
- 9. Enjoy!
