Ingredients

  • - 2 tablespoons vegetable oil
  • - 2 cloves garlic, minced
  • - 1 tablespoon minced fresh ginger
  • - 2 tablespoons Thai red curry paste
  • - 1 pound ground pork
  • - 1/4 cup fish sauce
  • - 2 tablespoons light brown sugar
  • - 2 tablespoons freshly squeezed lime juice
  • - 2 tablespoons chopped fresh cilantro
  • - 1/4 cup chopped fresh mint
  • - 1/4 cup chopped fresh basil
  • - 1/4 cup chopped scallions
  • - 1/4 cup chopped roasted peanuts

Directions

  1. 1. Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
  2. 2. Add the curry paste and cook for 1 minute more.
  3. 3. Add the pork and cook, breaking up the meat with a spoon, until it is cooked through, about 5 minutes.
  4. 4. Add the fish sauce, brown sugar, lime juice, cilantro, mint, basil, scallions, and peanuts. Stir to combine.
  5. 5. Reduce the heat to low and cook until the flavors have blended, about 10 minutes.
  6. 6. Serve over steamed jasmine rice. Enjoy!
