Ingredients
- - 2 tablespoons vegetable oil
- - 2 cloves garlic, minced
- - 1 tablespoon minced fresh ginger
- - 2 tablespoons Thai red curry paste
- - 1 pound ground pork
- - 1/4 cup fish sauce
- - 2 tablespoons light brown sugar
- - 2 tablespoons freshly squeezed lime juice
- - 2 tablespoons chopped fresh cilantro
- - 1/4 cup chopped fresh mint
- - 1/4 cup chopped fresh basil
- - 1/4 cup chopped scallions
- - 1/4 cup chopped roasted peanuts
Directions
- 1. Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
- 2. Add the curry paste and cook for 1 minute more.
- 3. Add the pork and cook, breaking up the meat with a spoon, until it is cooked through, about 5 minutes.
- 4. Add the fish sauce, brown sugar, lime juice, cilantro, mint, basil, scallions, and peanuts. Stir to combine.
- 5. Reduce the heat to low and cook until the flavors have blended, about 10 minutes.
- 6. Serve over steamed jasmine rice. Enjoy!
