Plum Cobbler

Ingredients

  • -3 cups fresh or frozen plums, pitted and halved
  • -1/2 cup granulated sugar
  • -1/4 cup all-purpose flour
  • -1 teaspoon ground cinnamon
  • -1/4 teaspoon ground nutmeg
  • -1/4 teaspoon ground ginger
  • -1/4 teaspoon salt
  • -1/2 cup cold unsalted butter, cut into cubes
  • -1 cup all-purpose flour
  • -1/3 cup granulated sugar
  • -1 teaspoon baking powder
  • -1/4 teaspoon baking soda
  • -1/4 teaspoon salt
  • -1/2 cup buttermilk

Directions

  1. 1. Preheat oven to 375 degrees F. Grease a 9-inch baking dish with butter or cooking spray.
  2. 2. In a large bowl, combine plums, 1/2 cup sugar, 1/4 cup flour, cinnamon, nutmeg, ginger and salt. Toss gently to combine. Spread the mixture into the prepared baking dish.
  3. 3. In a medium bowl, combine 1 cup flour, 1/3 cup sugar, baking powder, baking soda, and salt. Cut in the butter with a pastry cutter or two knives until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.
  4. 4. Drop spoonfuls of the batter over the plum mixture.
  5. 5. Bake for 25-30 minutes, or until the top is golden brown and the filling is bubbly. Serve warm. Enjoy!
