Seared Salmon

Ingredients

  • - 4 (6-ounce) salmon fillets
  • - 2 tablespoons olive oil
  • - Salt and freshly ground black pepper
  • - 2 tablespoons freshly squeezed lemon juice
  • - 2 tablespoons butter
  • - 2 tablespoons chopped fresh parsley

Directions

  1. 1. Preheat oven to 400°F.
  2. 2. Heat olive oil in an oven-safe skillet over medium-high heat.
  3. 3. Season salmon fillets with salt and pepper.
  4. 4. Place salmon fillets in the skillet and cook for about 3 minutes per side, or until lightly browned.
  5. 5. Transfer skillet to preheated oven and bake for 6-8 minutes, or until salmon is cooked through.
  6. 6. Remove skillet from oven and place salmon on a plate.
  7. 7. In the same skillet, add lemon juice and butter and stir until butter is melted.
  8. 8. Pour butter sauce over salmon and sprinkle with parsley.
  9. 9. Serve immediately.
