Ingredients
- - 2 cups all-purpose flour
- - 1/2 cup granulated sugar
- - 2 teaspoons baking powder
- - 1/2 teaspoon salt
- - 1/2 cup butter, chilled and cut into small pieces
- - 1/2 cup heavy cream
- - 1 teaspoon vanilla extract
- - 2 cups fresh strawberries, hulled and sliced
- - 2 tablespoons granulated sugar
- - Whipped cream, for topping
Directions
- 1. Preheat oven to 375°F. Grease an 8-inch round cake pan.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 3. Add the butter and use your fingers to rub it into the dry ingredients until it resembles coarse crumbs.
- 4. In a separate bowl, whisk together the cream and vanilla extract.
- 5. Pour the cream mixture into the flour mixture and stir until just combined.
- 6. Spoon the batter into the prepared cake pan and spread it out evenly.
- 7. Arrange the sliced strawberries over the top of the batter. Sprinkle the 2 tablespoons of sugar over the top.
- 8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- 9. Let cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
- 10. Serve with a dollop of whipped cream. Enjoy!
