Strawberry Shortcake

Ingredients

  • - 2 cups all-purpose flour
  • - 1/2 cup granulated sugar
  • - 2 teaspoons baking powder
  • - 1/2 teaspoon salt
  • - 1/2 cup butter, chilled and cut into small pieces
  • - 1/2 cup heavy cream
  • - 1 teaspoon vanilla extract
  • - 2 cups fresh strawberries, hulled and sliced
  • - 2 tablespoons granulated sugar
  • - Whipped cream, for topping

Directions

  1. 1. Preheat oven to 375°F. Grease an 8-inch round cake pan.
  2. 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. 3. Add the butter and use your fingers to rub it into the dry ingredients until it resembles coarse crumbs.
  4. 4. In a separate bowl, whisk together the cream and vanilla extract.
  5. 5. Pour the cream mixture into the flour mixture and stir until just combined.
  6. 6. Spoon the batter into the prepared cake pan and spread it out evenly.
  7. 7. Arrange the sliced strawberries over the top of the batter. Sprinkle the 2 tablespoons of sugar over the top.
  8. 8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. 9. Let cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
  10. 10. Serve with a dollop of whipped cream. Enjoy!
