Tofu Scramble

Ingredients

  • - 1 block of firm tofu
  • - 1 tablespoon olive oil
  • - 1/2 onion, chopped
  • - 1 bell pepper, chopped
  • - 2 cloves garlic, minced
  • - 1 teaspoon turmeric
  • - 1 teaspoon cumin
  • - Salt and pepper to taste
  • - Optional: nutritional yeast, spinach, tomatoes, mushrooms

Directions

  1. 1. Press the tofu: Wrap the block of tofu in a clean towel or paper towels and place a heavy object on top to press out excess moisture for about 15-20 minutes.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  3. 3. Crumble the pressed tofu into the skillet using your hands or a fork.
  4. 4. Add the minced garlic, turmeric, cumin, salt, and pepper to the skillet.
  5. 5. Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is slightly browned and the flavors are well combined.
  6. 6. Add any optional ingredients such as nutritional yeast, spinach, tomatoes, or mushrooms, and cook for an additional 2-3 minutes.
  7. 7. Adjust seasoning if needed and serve hot. Enjoy your delicious tofu scramble!
