Tofu Scramble

Ingredients
- - 1 block of firm tofu
- - 1 tablespoon olive oil
- - 1/2 onion, chopped
- - 1 bell pepper, chopped
- - 2 cloves garlic, minced
- - 1 teaspoon turmeric
- - 1 teaspoon cumin
- - Salt and pepper to taste
- - Optional: nutritional yeast, spinach, tomatoes, mushrooms
Directions
- 1. Press the tofu: Wrap the block of tofu in a clean towel or paper towels and place a heavy object on top to press out excess moisture for about 15-20 minutes.
- 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- 3. Crumble the pressed tofu into the skillet using your hands or a fork.
- 4. Add the minced garlic, turmeric, cumin, salt, and pepper to the skillet.
- 5. Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is slightly browned and the flavors are well combined.
- 6. Add any optional ingredients such as nutritional yeast, spinach, tomatoes, or mushrooms, and cook for an additional 2-3 minutes.
- 7. Adjust seasoning if needed and serve hot. Enjoy your delicious tofu scramble!
