Tofu Zucchini

Ingredients
- - 2 medium zucchini
- - 2 tablespoons olive oil
- - 1/2 teaspoon salt
- - 1/2 teaspoon black pepper
- - 8 ounces extra-firm tofu, drained and crumbled
- - 2 cloves garlic, minced
- - 1/4 cup chopped fresh parsley
Directions
- 1. Preheat oven to 400°F.
- 2. Slice zucchini into thin rounds and place on a large baking sheet. Drizzle with olive oil, salt, and pepper and toss to combine. Roast for 20 minutes.
- 3. Meanwhile, heat a large skillet over medium heat. Add tofu and cook for 5 minutes, stirring occasionally, until lightly browned.
- 4. Add garlic and cook for 1 minute more.
- 5. Add roasted zucchini to the skillet and cook for 2 minutes more.
- 6. Remove from heat and stir in parsley. Serve warm.
