Tofu Zucchini

Ingredients

  • - 2 medium zucchini
  • - 2 tablespoons olive oil
  • - 1/2 teaspoon salt
  • - 1/2 teaspoon black pepper
  • - 8 ounces extra-firm tofu, drained and crumbled
  • - 2 cloves garlic, minced
  • - 1/4 cup chopped fresh parsley

Directions

  1. 1. Preheat oven to 400°F.
  2. 2. Slice zucchini into thin rounds and place on a large baking sheet. Drizzle with olive oil, salt, and pepper and toss to combine. Roast for 20 minutes.
  3. 3. Meanwhile, heat a large skillet over medium heat. Add tofu and cook for 5 minutes, stirring occasionally, until lightly browned.
  4. 4. Add garlic and cook for 1 minute more.
  5. 5. Add roasted zucchini to the skillet and cook for 2 minutes more.
  6. 6. Remove from heat and stir in parsley. Serve warm.
